THAI NOODLE SALAD WITH PEANUT SAUCE
Ingredients for 2 jars:
- 100g cooked egg noodles - you can use whatever noodles you like
- A handful of grated carrot
- A handful of beetroot
- A handful of purple and Dutch cabbage
- A handful of baby spinach leaves
- A few cherry tomatoes Salted peanuts - chopped
Peanut Dressing Ingredients:
- 1/3 cup creamy peanut butter
- 3 tbl lime juice
- 3 tbl water
- 3 tbl brown sugar
- 4 tsp rice wine vinegar
- 4 tsp soy sauce
- 1 tsp sesame oil
- 1/4 tsp fish sauce
- 1/2 tsp minced ginger - optional
Method:
- Place a layer of noodles at the bottom of your Consol Jar then start adding all your other fresh ingredients, building up layers until you get to the top.
- In a small bowl, whisk together all the peanut dressing ingredients until smooth.
- Pour some dressing into the separate & very handy mini jar attached to the Consol lid. Close your jar up.
- When you're ready to eat, add the peanut dressing to the noodle salad and enjoy!
- P.S. You can chop & change what goes into them, but below is a yummy combo of fresh veggies, noodles & a delicious sweet & sour peanut butter dressing!
