THAI NOODLE SALAD WITH PEANUT SAUCE

Ingredients for 2 jars:
  • 100g cooked egg noodles - you can use whatever noodles you like
  • A handful of grated carrot
  • A handful of beetroot
  • A handful of purple and Dutch cabbage
  • A handful of baby spinach leaves
  • A few cherry tomatoes Salted peanuts - chopped

Peanut Dressing Ingredients:
  • 1/3 cup creamy peanut butter
  • 3 tbl lime juice
  • 3 tbl water
  • 3 tbl brown sugar
  • 4 tsp rice wine vinegar
  • 4 tsp soy sauce
  • 1 tsp sesame oil
  • 1/4 tsp fish sauce
  • 1/2 tsp minced ginger - optional

Method:
  • Place a layer of noodles at the bottom of your Consol Jar then start adding all your other fresh ingredients, building up layers until you get to the top.
  • In a small bowl, whisk together all the peanut dressing ingredients until smooth.
  • Pour some dressing into the separate & very handy mini jar attached to the Consol lid. Close your jar up.
  • When you're ready to eat, add the peanut dressing to the noodle salad and enjoy!
  • P.S. You can chop & change what goes into them, but below is a yummy combo of fresh veggies, noodles & a delicious sweet & sour peanut butter dressing!
