BUTTERNUT SOUP IN A CONSOL GLASS JAR
Fills 4 x 500ml Consol Preserve Jars
Ingredients:
15 ml Soft margarine / butter
1 Onion, diced
2 Cloves garlic, crushed
1 tsp Cinnamon
1 kg Butternut squash, peeled and diced
750 ml Water
1 Vegetable Stock
250 ml Fat free yogurt
Method:
- Melt the margarine/ butter in a pot, add the onion and garlic and fry until translucent.
- Add the cinnamon and fry for 2 minutes. Then add the diced butternut, water and vegetable stock, and stir well.
- Bring to the boil then reduce the heat and simmer for 25 - 30 minutes, or until the butternut is soft.
- Take off the heat and blend until smooth using a food processor or stick blender. Mix in the yoghurt and add seasoning to taste.
- Pour the soup into your 500ml Consol Preserve Jars and serve hot with bread.
- Save the rest for later on in the week!
