LOADED GUACAMOLE

Ingredients:
  • 3 ripe avocados
  • ½ cup whole corn kernels, tossed in 1 TBSP olive oil
  • ½ green chilli, chopped
  • 1 jalapeño, chopped
  • 6 rosa tomatoes, chopped
  • ½ cup coriander, chopped
  • ½ red onion, chopped
  • ½ lime, juiced
  • 2 cloves of garlic, finely chopped
  • 1 round of feta, crumbled
  • Salt and pepper to season

Method:
  • Scoop out the avocado into a bowl and mash with a fork.
  • Add the garlic and lime juice, then season with salt & pepper.
  • Combine the corn kernels with the chopped green chilli, then add the chopped jalapeño, tomatoes, coriander and onion.
  • Garnish with feta, a sprinkling of chopped coriander, a few slices of jalapeno and a final seasoning of salt and pepper.
  • Serve in a Consol Glass Montpellier bowl.
