FETTUCCINE ALFREDO

Serves 4 Consol Glass Opal Rimless Soup Bowls 

Creamy, comforting and irresistibly indulgent - Fettuccine Alfredo is the ultimate crowd-pleaser that feels fancy, but comes together in no time. Whether you're planning a cosy weeknight dinner, or impressing guests with a classic Italian favourite, this dish is your go-to for rich, velvety pasta perfection.

Ingredients: 

  • 1 pack (500g) Fettuccine 
  • 1 TBSP Oil 
  • 4 pieces Chicken schnitzel 
  • 1 pack Bacon 
  • 1 TBSP Butter 
  • 1 TBSP Flour 
  • 2 cups Cream 
  • 1 punnet Mushrooms 
  • 1 tsp Garlic, crushed (can add more or less as desired)
  • To taste Salt
  • To taste Pepper
  • To garnish Parsley

Method: 

  1. Cook the bacon until crispy, then chop into bite-sized pieces and set aside.

  2. Place the chicken schnitzel in an air fryer and cook on the air fryer setting at 200°C for 15 minutes, or until golden brown and fully cooked through. Once done, slice into strips and set aside. 

  3. Place a pasta pot filled with water on medium high heat and bring to a boil. 

  4. Once boiling, add 15 ml oil, a pinch of salt and the Fettuccine. Stir the pasta using a wooden spoon to evenly distribute the oil and prevent the pasta from sticking.

  5. Continue to cook over medium heat until water becomes milky white and the Fettuccine is al dente, then remove from the heat and drain excess water.

  6. Whilst the pasta is cooking, in a separate saucepan, melt the butter over a medium heat, then add the flour and stir to form a smooth paste. Cook for 1 - 2 minutes, or until the paste turns golden brown.

  7. Gradually add the cream to the paste, whisking continuously to prevent lumps, then once the sauce thickens, reduce the heat to low.

  8. Add the mushrooms to the sauce and cook until softened. 

  9. Then stir in the cooked bacon and crushed garlic and season with salt and pepper to taste. Remove the saucepan from the heat.

  10. Add the cooked Fettuccine to the sauce, tossing to ensure the pasta is evenly coated.

  11. Plate the Alfredo pasta into Consol Glass Opal Rimless Soup Bowls and top with the sliced schnitzel. 

  12. Finish by garnishing with fresh parsley and enjoy!
