Baby Pea Purée with Mint

This vibrant pea purée with a hint of mint is a fresh, flavour-packed first food your little one will actually enjoy. Make a batch, then store it the smarter way in your Consol Glass Preserve Jar (250ml) or Consol Glass Madrid Baby Container (130ml) - keeping every spoonful fresh, pure and exactly as you made it.

Ingredients:

  • 2 cups Peas, fresh or frozen

  • 1/2 cup Zucchini, roughly chopped

  • 4 Mint leaves, roughly chopped

Method:

  1. Bring about 5cm of water to a boil in a medium saucepan over medium heat.

  2. Place the zucchini into a steamer basket or colander, set over the boiling water, cover and steam for 5 minutes.

  3. Add the peas and steam for a further 3 - 5 minutes, until soft and tender. Reserve a little of the steaming water, then allow to cool slightly.

  4. Transfer the zucchini, peas and mint into a blender, or food processor, then blend together until smooth.

  5. If needed, add a little of the reserved water (a few tablespoons at a time) to reach your desired consistency.

  6. Let the purée cool completely before serving or storing in a Consol Glass Preserve Jar (250ml) or Consol Glass Madrid Round Baby Container (130ml).

No steamer? No problem:

Simply add the zucchini and peas to a small saucepan with a splash of water (just enough to lightly cover the base). Cover with a lid and gently simmer for 5- 7 minutes, stirring occasionally until soft. Reserve the cooking liquid and continue as above.
